Dairy-Free Hot Chocolate Mix
It's hot chocolate season, honey! One I like in theory but not so much in practice, as most hot chocolates leave me too wired (caffeine), jittery (sugary) or nauseous (rich and creamy). I also don't love that because we don't have a microwave, I have to get a saucepan out just to make one!
This mix is the perfect antidote. Once it's made, you only need a boiled kettle and your mug to make your hot choccy. It would make such a sweet gift and I personally really appreciate that the final product isn't too rich. Make this as an act of service to yourself over these cooler months.
INGREDIENTS
- 80g dairy-free milk or dark chocolate (choose a variety you enjoy the taste of)
- 45g (1/2 cup) soy milk powder (available online or in health food shops)
- 115g (1/2 cup) caster sugar (can use less, if you'd prefer)
METHOD
- Place all the ingredients in a small food processor or blender and blend until the chocolate has disintegrated into tiny specs (approx. 90 seconds).
- Store in an air-tight jar or container.
- To use, add a few heaped teaspoon-fulls (approx. 2 tbsp) to a mug. Pour over hot water – leaving enough room for a splash of milk (if desired) – and stir for 30 seconds or so. It will look a little grainy and not very chocolatey, but give it a minute for the chocolate to completely melt. Add a splash of milk if you like (more to cool it down than for taste) and enjoy!
